harvest show 2014

On a beautiful sunny day yesterday, I popped out the studio for a few hours to see the Harvest Festival.
It seems you enjoy creating all sorts of awards in everything. Especially I love this kind of sweet competitions. I love seeing the effort that goes in any small things and the critical eyes that appreciate and praise it.
One day I would like to visit one of the fields of those huge pumpkins!
昨日はHarvest Festivalに行ってきた。この季節になると、イギリスのあちこちではこのようなフェスティバルがあり、野菜やフルーツの品評会をする。
品種ごとに賞もあり、形が美しいことや揃っていることなどが審査の基準となる。やはりりんごや洋梨のエントリーが多い。観客としては、お店などで見る事のない品種を見る楽しみがあると同時に、こういう伝統的な催しを続けるによって、いろいろ守られる価値や思想もあると思い、嬉しくなる。
また品評会独特の野菜の並べ方がおもしろかったり、かわいかったり。
これは700種近くあるりんごの種類のたった一部。りんご好きには、聖地のような果樹園がイギリスにはある。生食用のりんごが400種と仮定して、一年で50種食べたとしても8年はかかるなー。遠い道のり。
品評会に出してもダメな野菜の例。プロの見る目っておもしろい。

crystal lemon cucumber

I tried this cuke for the first time. It's one of the things I started noticing recently. This year they seem to be everywhere, so I gave it a go! Simple salad with kohlrabi, just sliced vegs with olive oil, lemon and wine vinegar. 

「食」への関心が高くなっているロンドンでは、食品のバリエーションも増えてきている。この野菜も最近目にするようになったものの一つで、キュウリの一種。見た目は丸くて、ホントにレモンのよう。種の部分が大きいけれども、身はしっかりしていて臭みが少ない。コルラビと一緒にサラダにしたら、日本のキュウリを思い出した。
ちなみに、こちらでよくあるキュウリは、日本のものの3、4倍くらいの大きさがあり、とても水っぽく、味も薄い。日本のものが恋しくなる野菜の一つ。

what tomatoes tell about your local?

Made it again... Simple tomato carpaccio. 
The recipe hasn't changed at all. What changed was where I got these heirloom tomatoes... surprisingly in Hackney! I used to go to Borough or Maltby just to get these tomatoes but I now know at least 2 shops that stock them in my neighbourhood.
Hackney's been really changing! 

この頃は暑い日が続いている。食欲が減ってきた時によく食べるのが、このトマトのカルパッチョ。トマトの味をシンプルに味わえるから。簡単なレシピは過去のブログに書いているので、今回はこのトマトについて。
トマトは、最も品種改良が進んでいると言われていて、遺伝子組み換えも行われている野菜の一つ。すでにアメリカでは、紫のトマトが出回っていると聞くけれども、イギリスではEUの規制があるので、見る事はない。この色とりどりのトマトはエアルームトマトやヘリテージトマトと総じて呼ばれ、固定種ならではの香りや味、食感の違いがあって、一皿の中で十分に楽しめる。
数年前でも、ボローなどの食いしん坊市場に行かなければ手に入らなかったものが、今では近くの店で手に入るようになった。ハックニー(私の住んでいるエリアね。)は確実に変わっていっていると実感することの一つ。
ちなみに「ミニトマト」は、こちらでは「Cherry tomato」。言わんとしていることは理解はしてもらえるけれども、ミニなトマトは2種あるので、どっちのこと?と聞き返される。

sakura mochi project -2

This weekend I spent some time to make one of the ingredients for sakura mochi. I cooked sweet rice and dried it for a few days until it became hard like stone, and then ground it to smaller grains using a food processor.
This is what we call 'doumyouji ko' and use for the skin of the sweet, outside adzuki paste. Although, this is West Japan style. In East Japan they use flour instead of this. There seems to be a variety in names and styles depending on the area.

この週末は、道明寺粉作りに挑戦。異国で住むと、こういうところで苦労する(というよりは、食いしん坊だからかしら?)。餅米は日本食材店ではもちろん、アジア系のお店でも簡単に手に入り、餅米の玄米というのもある。
wikipediaの言うとおり、蒸し、二日かけて乾かし、フードプロセッサーで挽いてみたら、そんな感じのものになった。目は揃ってないけれども、準備は着々と整っていく感じ。次は餡だ。

wild plum

The other day we picked up some plums in our neighbourhood. There are a few kinds of the wild plum in a park and the fruits have started turning their colour already. In half an hour we each got about 3kg of plums, which is A LOT! With the ones that are not quite ripe I made Japanese plum wine with English twists. In the same way you make damson gin, we make plum wine using other kinds of plum and liquor. Actually the plum we use is more like apricot, it's got a thicker and hairy skin. We use it when it's green and hard. We prick it to make the exchange of flavour and liquid easier, and that is a children's task on a day in the rainy season, June. The liquor I chose this time was white rum just for its subtle flavour comparing to the others. I will let you know what it tastes like a few months later.
With medium-ripe plums I made chutney. It was a very time-consuming process, but I enjoyed it. Despite the fact the whole house smelled vinegar for a few days, it was worth trying even just to appreciate the ones in the markets. I gave some to my friends but still have a lot. It will last for a while even for me who is a big fan of chutney and chedder/stilton sandwiches!
この間、マヌたちとプラム狩りをした。プラムが近所の公園の中に、数種類が半自生しているのだが、高さのあるもの低いもの、どれもたわわに実っていて、30分ほどの間で3kg近くの実を集めてしまった。
家に帰って、青めのもので梅酒、熟してきているものでチャツネを作る。こちらにもスロージンやダムソンジンなど、フルーツをジンやウォッカなどのお酒に漬け込む習慣がある。違いは熟したものを使うことかな?私は、風味の少ないホワイトラムを使ってみた。仕上がりは数ヶ月後。どんな味になるかしら?
そして、初挑戦のチャツネ。フルーツを玉ねぎやりんごと大量のスパイスとビネガーで煮詰める。イギリスにはチャツネとチェダー(またはスティルトン)というサンドイッチがあり、シンプルながらとても美味しい。チャツネ作りは時間がかかったけれども、その複雑な味の正体を知る事ができて、良い勉強にもなった。早速、サンドイッチを作って食べてみる。アメリカのレシピを参考にしたので、砂糖の量を半分にしたけれども、もうちょっと甘くても良かったな、、、。
次に来るのはブラックベリー。ロンドンは公園や運河沿いのあちこちに生えている。都会ながら自然が多いのがこの街の魅力。建設ラッシュの東ロンドンだけれども、緑はちゃんと残って欲しいな。

kombucha

It's been such a long time since I last blogged...! The reason I stopped doing it was for me to have more time to think through. The blog is bit too short to go to the depth I wanted to explore, but my friends the other day told me that they were enjoying my blog... So I decided to come back and talk about the tiny little things around me. OK..., what's new?

The very new thing for me is Kombucha. I got 'mother' from my friend more than a month ago, and now I've got the second 'mother'. It's fermented tea with lots of bacteria good for you. (wikipedia
For me, what changed was my headache. I don't have it anymore so I feel much better. Also, I think I have a better stomach. I get hungry quicker than I used to... Apparently the amount of enzyme you can produce in a life time is limited, less as you age, so this is a quick and easy way to supplement.
Try it out if you like this sort of things, but carefully. Please always follow the instruction, there are plenty online.
I'm also brewing ginger beer for the summer!

久しぶりのブログ。ストップしていたのは、大した事を書いていないのに、意外と時間がかかるから。それに、短い文章の中では追求できることが限られているにも関わらず、書いた時点でそれなりの達成感があり、終わってしまうから。でも、ネタ探ししながら街を眺める視線が恋しくなり、また再開。でも、これからはマイペースでいこうと思う。

さてさて。最近ハマっている事は、コンブチャ。こちらでは、密かにブームが来ていて、私も友人から「マザー」を頂いた。コンブチャとは昆布茶にあらず。母の時代に流行ったという「紅茶きのこ」で、一種の酵素ドリンク。砂糖の入ったお茶に「マザー」を浮かべて2、3週間放置すれば飲み頃に。出来上がりはリンゴ酢のような味がする。飲み始めてまだ数週間だけれども、当時、苦にしていた頭痛がすっかりなくなった。それに、お腹の調子が前にも増して良い。
これからの季節、発酵には最適だし、ビネガー感覚でも使えるので、お試しあれ。

sakura mochi project

This weekend I spent some time trying to identify the three sakura trees.
Using Natural History Museum's website and some Japanese ones I think I know the two. The sakura in the last post is Fugenzo in Japanese, its botanical name is Cerasus x Iannesianna Carriere, 1872 'Alborosea'.
Another one is Kanzan or Sekiyama, Prunus Iannesiana Wils. cv. Sekiyama. (the picture below.)
The leaves of these sakuras are thicker than the other one, which is not so great to make sakura mochi.
The third one is still remaining mysterious to me and I'm working on it. Actually it's very similar to the kind that we use for the salted leaves in Japan, but the shape of its leaves doesn't match with the description of the kind. However, the leaves I picked the other day are nicely thin and are producing really really lovely smell. I'm hoping this one works well in my project!

今週末は、塩漬けにした桜葉の種類を明らかにしようと思い、調べてみた。
いろいろな発見があり、勉強になって楽しかった。例えば、葉が違うので桜だとは思っていなかったものが、柳桜と呼ばれるものだったということ。そこら中で見る桜の一つ(2つ目の写真)が関山と呼ばれ、桜の花の塩漬けによく使われるものだということ。(来年はあんパンも作れる。)何よりも、桜を見分けるための特徴のいろいろを知ったこと。前回のポストの桜は普賢象と呼ばれ、葉化した2本の雄しべがかなり特徴的。
しかし、3つめの葉は、未だ不明。白い桜なので、かなり絞ることができるのだけれども、全部の特徴がぴたりと当てはまるものがまだ見つからない。でも、葉も薄く、香りも良いので、桜餅にはちょうど良さそう。期待もだんだん高まる今日この頃。
3番目の写真から種類がわかる方、どうか、教えてくださいませ。

beautiful sakura... to eat


Sakura season has finished in Japan. It's the most beautiful season that all the tree comes into bloom and all the flowers go at once. I wonder what it was like this year as they had a storm in the middle of the season.
I've been also enjoying the sakura blossoms in London but that's not the only reason I've been staring at them. It's for this project: making salted sakura leaves. It's been in my head for 2 years since then: my post about sakura mochi.
I found there are 3 majour variations in London, although I don't know their botanical names nor common names. I will try all of them this time and see if there's any difference. 
The process is: washing and pickling (?) in salt water. The leaves produced beautiful scent when I poured hot water on them. It's the smell of spring!

今年のイギリスはずっと暖冬だった上に、2月の半ばには桜が咲き出す暖かさになった。かと思えばまた冷え込んだり、、、という気候だったので、結果的には桜を長く楽しめたと思う。
そして、今日は、この頃からずっと頭の中にあったプロジェクトを実行。桜葉を塩漬けにした。
名前はわからないけれども、ロンドンにはメジャーな桜の木が3種類あることに気づき、それらから試してみることにした。
桜葉の塩漬けは結構簡単。お湯にくぐらして、塩水に漬けるだけ。ただ、桜の種類や葉の若さによって、どれだけの違いが出てくるのかわからない。来年には忘れてしまうかもしれないので、今回の試作を記録に残しながらの調理。
葉っぱを摘んでいる段階では心配だったけれども、お湯にくぐらした瞬間にあの独特の香りがたちのぼって、心躍ってしまった。桜餅made in London、どうなる!?

brixton


This is a part of London I hardly go... Brixton. It's just such a notorious area for gangs and crimes, but I'd wanted to see Brixton village where you can hang out for nice food, coffees and some vintage shops.
I was surprised to find the market is quite big and very buzzy. There are so many choices of what you can have for lunch: burgers, grills, pizza, curry, Thai, Japanese, Pakistani, French, Portoguese etc ... and, of course, Carribean! It seems they serve nice food everywhere and people were queueing up some places. It's good that you can see what they serve by checking what others are having at outside table before taking your seats.
We tried Portoguese grill with Piri piri sauce... Yum! and the bill for two (without drinks) was well under £20! 
We got latte from Federation coffee after lunch. Very nice!

今日はBrixtonに行ってきた。ロンドン南部のピカデリーラインの最終駅。もともとロンドン郊外だったこの場所に、4、50年代移民が移り住んだので、アフリカ系、カリブ系の人が多い。(何気にポルトガル人も多いらしい)音楽好きならブリクストンアカデミーの名前から、地名だけ知っている人も多いかもしれない。でも、ここはロンドンでも危険な地域の一つで、ギャングがらみの犯罪が多く、コワい。
ただここに、ここ数年お洒落スポットとして話題のBrixton villageというマーケットがある。まるで屋台村みたいに、たくさんの小さなレストランが並んでいて、どこもそれなりにおいしそう。お昼時には人で溢れかえり、外にも席が出ているので、テーブルに載っている料理をチェックしていると、すっかり目移りしてしまう。ブリオッシュ生地のバンのバーガー屋さんやサワドー生地のピザ屋さんも気になったけれども、結局グリル屋さんへ。ピリピリソースは殺人的だったけれども、おいしかった。

villageはアーケードになっていて、一歩外に出ると、レゲエの音と生肉の匂いがする。 "God bless you"という言葉をあちこちでかけられる(本当は、宗教のフライヤーを配られているのだけれども)。路地裏にすごく小さな美容院やらDJブース、電気のついていないセカンドハンドショップ(お客さんが入っていないとお店には見えない)などがあり、まだまだ混沌感も満載。なんだか逞しさを見て元気をもらった。

advent

This is the last piece of stollen already. I need another loaf!
We celebrate Christmas in Japan but it's not a National holiday. When I was little we would have our little relatives around at home and had a party. We would have Kentucky Fried Chicken and curry and log-shaped Christmas cake made with either ice cream (I used to love it!) or fresh cream. I would hang a stocking next to my bed, but it was just a very ordinary sock I would wear every day... What a shame...! 
It‘s not quite the same, I think, how they celebrate the day in Japan now as we used to do but is still pretty much in Japanese style I think.
I'm also finding the variations in Europe too. I have an Austrian friend with two kids. I joined their wreath making workshop the other day. I'm still working on it after 10 days...

この間リース作りをした。ワイヤーを芯にして新聞紙を輪っかにし、短く切った松の枝で覆っていく。オーストリアでは、このリースは机の上に寝かせて置いて、キャンドルを4つ置くのだそう。この4本はクリスマスまでの4週間を意味し、この期間をAdventと呼ぶ。
アドベントカレンダーなるものもあって、1から24か25までの数字の書かれた窓があり、窓を開ける度にクリスマスの風景が完成していくようなものや、箱になっていてちょっとしたお菓子やプレゼントが入っていたりするものもある。子供たちはその小窓を毎日開けながら、クリスマス当日が来るのを楽しみにするのだそう。
ドイツでは、シュトーレンをこの期間に5ミリほどの厚さに薄く切りながら少しずつ食べる習慣がある。私もその習慣を真似てみようと思ったけれども、写真に納めたのはすでに最後の一切れ、、、。
こちらではクリスマスケーキとして、イギリスのミンスパイやクリスマスプディング、ドイツのシュトーレン、イタリアのパネトーネが店頭に並ぶ。イギリスの2点は、ドライフルーツの比率がかなり高く、かなりくどい。でも、今年はトライしてみようか、、、。とりあえず、イギリスネタとして紹介したいな。

It feels like a long time since the last I blogged about food.
The thing is when I get busy I just cook to fill my stomach. I don't care how it looks on the plate therefore there's no way a photo opportunity!!
Anyway thank you so much for having visited me at handmade in Britain, Chelsea Old Town Hall too! The next one is our open studio on 14th Dec. Please keep the date in your diary. I'll have lots of seconds I made while developing the new series. There will be a lot of bargains! 

Anyway today's lunch. I tried the tripoline for the first time and love it. This time I made chard and stilton sauce just because I had them in the fridege. Now I'm  ready to go to the studio to finish up the Christmas orders!

大きなクラフトショーが2つ、立て続けにあり、その準備で追われた。その上、ありがたいことにクリスマスオーダーの追加と展示会への参加をご招待頂き、夏が終わってから、休みなしではないかしら。(とは言うものの、粘土の乾きが遅く、早く切り上げる日もあれば、リンゴの皮むきのために自転車を走らせることもあるので、決してフル稼働ではない。)
とにかく、料理したものを写真に収めるほどの余裕はなかったようで、久しぶりの食べ物ブログになってしまった。
今日のランチはトリポリーンというパスタを使ってみた。厚めの麺パスタで、片側にリボンのような波がついていて、ソースとの絡みが良い。もう季節も終わりそうなチャードと、イギリスブルーチーズのスティルトンとクリームソースを作ってみた。おいしい!パスタはあまり食べないけれども、(お米とパンの方が断然に好きなので)たまに食べると良いな。

national apple day

21st October is National apple day in England and we celebrate the fruit on the weekend close to the date. (I found out it's quite recent thing only since 1990.)
This Sunday I popped out the studio to Borough market to take the third attempt in the peeling competition along with my own knife! Although, we arrived too early and the competition was later in the programme and on a stage whereas it used be anytime under a marquee. So I gave up the idea. 
I tried some apples in an acceptable amount at the tasting table: Shoreditch white (sweet but not much aroma), Wellcome (tiny bit sweet and tiny bit sharpness in a tiny tiny apple), Joybells (juicy and good balance of subtle sweetness and sharpness).
I always try as much variety as I can from markets but every time I come to this festival I found a lot more I've never seen. I hope I'll finish tasting all the English varieties some day!

こちらでは10月21日は「りんごの日」ということで、週末にapple marketなるものが、いろんなところで催される。今年も皮むき大会に挑戦!と傾向と対策を練った上に、マイナイフ持参でBorough marketに向かった。が、昔はテントがあって、いつでも参加OKだったのが、特定の時間からステージ上で始まる形式になっていたので、諦めることに、、、。
りんごは、起源の古い果物の一つで私たちと関わり合いも長いのだけれども、イギリス人にとっても親しみのある果物。庭にリンゴの木を持っている人も多く、日本人が自家製味噌を自慢するように、今年のリンゴの出来を話したりする。私が来た当初、スーパーでの表示もネーブルもクレモンティーンもただ’orange'だった時にでも、リンゴはバラエティの名前をちゃんと表記されていた。イギリス種のりんごも豊富で、私も常日頃バラエティを試すようにしていても、このapple marketに来ると知らないないものをたくさん見つける。(ちなみに、上の写真には日本ではお馴染みのJonathan gold。でも、こちらではほぼ見ない。)そして、以前にも書いたけれども、どれも小さい。
日本のリンゴが酸味と甘さ、歯ごたえがどれもよいバランスなのに対し、こちらのりんごはキャラクター豊か。アロマも歯ごたえも全然ない!みたいなものもあれば、酸味強すぎなものもある。でも、調理法がいろいろあるので、それなりに使えてしまう。そして、何よりもチーズと食べる習慣がある。
チーズのクセとリンゴそれぞれの性格をうまく理解して合わせてくる人は、上級者。逆に当たり外れの少ない日本のリンゴでは、取り合わせの妙を楽しめないかもしれない。
私にとってリンゴ新シーズンの知らせははDiscovery apple。(写真左、9月あたまに撮ったもの。)ちなみに真ん中はKaty、右がWorcester pearmain(Discovery appleの親種に当たるのではないかと言われているらしい。)

roast chicken on the biggest plate I've ever made!

I got some plates done in the last week. 
It's one of the new series I will be showing in the upcoming shows. This year I will have more functional stuff. I hope you'll like it and take it home too!

昨日はローストチキン。冬になるとローストが食べたくなるのは、不思議だ。(イギリス人化しているのかしら?)
今回はタマリンドペーストをベースにしたものを使ってみた。ガーリックに玉ねぎ、タマリンドペーストと八角、はちみつ、レモン、塩とブイヨンの中にマリネしてみた。うんうん、アジアな雰囲気がよい。でも、も一つツイストしたいですな。ということで、この冬の課題になりそう。
お恥ずかしいことではありますが、お皿は自作です。この大きさが作れるようになったのは私的にはかなり嬉しいのです。(同業者からは、「まだまだ!」と突っ込まれそうですが、、、。)

onigiri

Last week the news about the Fukushima was so disconcerting that I didn't feel like writing. No.., actually I had so much to write about it and didn't know where to start and stop...
Our culture especially our food culture benefits so much from the sea and we shouldn't contaminate it at all how harmfull or not. We have known that from our history, yet people in the power, some of the politicians, major constructors and scientists promotes unnecessary (sometimes very useless) constructions for their own benefits. I feel like these people ruins everything even though there are SO many ordinary people trying to make things right.
Onigiri is one of the very traditional everyday food. We press freshly cooked rice into shape of triangle or ball with a bit of salt and wrap it with a sheet of seaweed we cultivate in the sea: nori. So it's such a simple food but tastes so home to me. (We make variations by adding ingredients.)  Although if we don't keep the sea clean it's very difficult to make it so nice.
The affected area by the Fukushima was a great production centre of another seaweed: wakame which is also a vital ingredient in Japanese cuisine. It's such a shame that we now have to examine its safety so frequently.

先週の福島汚染水のニュースはこちらでも取り上げられた。海流に乗って太平洋全体が汚染されているという学者もいる一方、日本からは人体への影響は少ないとの報道(信憑性は、、、?)。どちらにしても、海からの恩恵を受けているのだから、有害の云々に関わらず起こるべきではない事故だったと思う。
震災以前に六ヶ所村の再処理工場ができた時にも、廃液の処理や地下水の汚染、その他諸々のことが懸念されていたのに、原発そのものがこれだけの大問題を起こして、心配が現実となってしまった。
話は変わるけれども、私の地元には長良川という、鮎で有名、そしてシジミ等も採れる川がある。父もこの川の独特の香りがする鮎が大好きで、季節になると朝一番で競りに行くという趣味を持っていた。けれども、河口堰の建設が小さな頃から問題になっていて、地元の漁師さんも一生懸命反対していた。河口堰によって鮎などが川に戻れなくなる他、諸々の問題があったのだけれども、横に小さな川をつけることで、結局建設は始まってしまった。長良大橋を渡る度に、海を隔てる堰を見ながら「醜いなー」と父がつぶやくのを何度も聞いた。でも、醜いと思っていたのは堰だけじゃなくて、それを取り巻く人間の欲なのかもしれないと今回の事故を見ていても思う。

ところで、何てことないおにぎり。友人が有明産の海苔を持って来てくれた。日本にいると気付かないことかもしれないけれども、中国産や韓国産の海苔とは全然香りが違う。海苔の養殖にも薬の使用の問題などあるようだけれども、とりあえず、きれいな海を守って欲しいと願うばかり。

bumbu gado gado

Today's summer noodle dinner: Bumbu gado gado (-ish) & Vietnamese noodle.
I found this sauce in a spice shop. It was a very small shop but he had a huge variety of spices & spice mixes from all over the world. I wanted to try everything that I've never heard but there was so much! 
One of the spice mixes I tried was this Bumbu gado gado, an Indonesian sauce, just because I loved the sound of it. But when I tasted it in the shop I loved it even more. It was sweet and salty that reminded me of sesame sauce we have in Japan.
What you taste mainly is peanut, sugar, coconut and some spices and saltiness. The shop owner told me that they mix it with steamed/raw vegetables and also recommended me to have it with rice. 
I just improvised it into the cold noodle dish with Dongpo pork in Japanese style. Obviously it's not Indonesian cuisine anymore but... yum! Happy Sunday! 

今日は冷麺料理。
この間、スパイス専門店からいくつか香辛料を手に入れてきた。そのお店はとても小さかったけれども、ノッティングヒルのスパイス屋に劣らない品揃えで、200近い世界中の香辛料と香辛料ミックス、数十種の塩などを扱っていた。私の見たことのスパイスもたくさんあるので、どれもこれも試してみたかった。店長はとても造詣深く、聞いてみるといろいろ話してくれるし、味見もさせてくれたので、気になってみたものをいくつか頂いてきた。
そのうちの一つがブンブーガドガドという楽しそうな音のインドネシアのソースミックス。味は胡麻和えのたれに似た感じで、ピーナッツとパーム糖、ココナッツにスパイスと少しの塩っぱさと辛さが加わったもの。インドネシアでは茹でた野菜などと和えたり(まさに胡麻和え!)するんだそうで、お米と食べてもおいしいよと店長が教えてくれた。
今回は、青梗菜とサヤインゲンの類いに和え、ベトナム麺にトンポーローとコリアンダーも添えたので、全く何料理かわからなくなってしまったけれども、おいしかった!ソース自体も自分で作れそうだし、またいろいろ試してみようっ。

rhubarb 2013!

Finally this time of the year has come! Oh, it was a long way.
This is one of the top 10 ingredients I love here, as we hardly find this in Japan. I really love the smell of the vegetable when it's fresh too.
I made a simple compote. What shall I have it with...? Hmm... yummy already in my head. I'm looking forward to the happy next week!
ついに、この時期がやってきた。待ちに待ったルバーブの旬の季節!
すっかり恒例のルバーブのコンポート作りで午後を過ごす。ちなみにルバーブはこんな感じで(まな板の上)束になって売られている。畑では、ふきみたいに茎の先に大きな葉っぱがついている。
レモンの種でペクチンを作っている間に、適当な長さに切り、砂糖と混ぜておく。あとは、白ワインとレモン汁で30分ほど煮込むだけ。その間に、ルバーブから水分が出てきて、繊維がほぐれ、なんだかドロドロとしたものが出来上がる。見た目は決して良くはないけれども、これが、とってもおいしい!
こちらの人はクリーム系と一緒に食べるのが美味しいことを知っており、ヨーグルト、カスタード、アイスクリームと食べる。ある年など、クランブルカスタードケーキ作りにはまっていて、ルバーブを混ぜ込んだ日には大感激してくれた。今年もまた作ってみようかな?
1.2㎏から、これだけできた。さてさて、どれだけもつかしら、、、?

shiratama

I made shiratama zenzai. I just really felt like it.
We make dough from shiratama (rice) powder and water and boil it in hot water. I ate it with sweet boiled azuki beans. 
This was the dessert menu we learnt at primary school. It always reminds me of the first school cooking class at the age of 9 (10? I'm not so sure...). We cooked rice, frying egg and miso soup. And all of us brought a tin of whatever we like and had it with what we cooked. 
My friends from primary school are coming over in a week. I'll check my memory with them!

昨日は、どうしてもあんこが食べたくなって、白玉ぜんざいを作った。
白玉だんごは小学校の家庭科実習で教えてもらったので、作るたび、いつもその時のことを思い出してしまう。皆が家から持ってきたお米で、ご飯を炊き、味噌汁と、目玉焼きを作ってツナ缶を食べたと思う。
来週、小学校の時からの同級生が来るので、確認してみよう。優秀なお二人だったので、家庭科の記憶などないかもしれないけど、、、!

fresh almonds

OK this is something we unlikely to see in Japan.
I was told to eat the whole thing by a Turkish grocer. The taste reminds me of green ume (a kind of plum) but not much fruitiness. I wish to find other way to eat it... I'll try... chopping it into yoghurt.

季節の食材、生のアーモンド。
近くのトルコ系のお店で見つけた。こういうものを見つけると試さずにはいられない質なのだ。お店の人が、洗って食べるだけだよと教えてくれたので、試してみると、フルーツ感のない青梅のような感じ。ほぼ苦みにほのかな甘さと噛んだ瞬間にだけ感じられる瑞々しさがあるだけ。そら豆のような感覚で実を割ると、水気を含んだ種が出てくるけれども、スイカの白い部分みたいな味。結果、個人的にはナッツになるまで待ちたい、という印象。でも、これを食べるようになった背景の食文化は調べてみたいな。

unbelievable weather in london and white choc bite

It's been so so cold in the UK. We had snow in London last week and the cold weather has been staying now for 2 weeks and more. Meanwhile it's got a lot warmer in Japan and they're having sakura blossom season a week earlier than usual... 
Oh well..., at least I've got a handsome blue bird bringing joy into my place. Lovely work by a Japanese ceramicist Taichi Abe.

At home I'm tying to perfect a matcha bownie. As green tea powder is running out before I get the texture right, I tried it with rum and raison instead. It was failure as brownie but I've got a lovely cake!
Please try: 150 unsalted butter, 200g white chocolate, 2 large eggs, 2 heap spoons of raisin and rum enough to soak, 80g plain flour.
Soak raisin in rum until raisin get softer. Melt butter and chocolate in separate bowls. Add tiny bit of salt into butter and stir until it gets whiter, then add melted chocolate into it. Whisk eggs in another bowl and pour it into the mix then stir sieved flour and rum& raisin into it. 
Pour the mix into brownie tray and bake it at 170 degree for 40 mins.
イギリスは先週、この時期信じられない程の寒さになり、雪まで降る始末。50年ぶりだという寒さはその後も続き、また電気が通じなくなった地域もあり、大変でした。
仕事柄、冷たい水を使わざるを得ないので、私の手にはアカギレが。こんなことは初めて。フラットに戻ると、安部太一さんの青い鳥が迎えてくれるのが、余計嬉しい、、!
家では、イギリス版(甘めで、しっとり)の抹茶ブラウニーを試行錯誤していたのですが、チョコレートの質感がうまくいかない、、、。やはりビターチョコとホワイトチョコでは成分が違うからなのよね、、?抹茶が減ってしまったので、ラムレーズンに変えたら、なかなかおいしい焼き菓子が出来上がりました。
スプーン山盛り2杯のレーズンをラムで浸して柔らかくし、ボウルにホワイトチョコレート200gを溶かす。別のボウルに、無塩バター150gを溶かし、塩を少し加え、白っぽくなるまで混ぜ、溶けたチョコレートを混ぜる。そこへ、別のボウルで混ぜた卵2個と、柔らかくなったレーズンをラムごと入れ、薄力粉80gをふるいにかけて混ぜます。それを、ブラウニー型へいれ、170度のオーブンで40分焼けば出来上がり。
早く、暖かくなりますように!

soy sauce

I've been wanting to talk about it, but found it so difficult as it is the very core of our food culture and also is a private thing. I'll try, but please research into it if you're interested.
Once I thought what would function in Western cuisine like soy sauce does in Japanese, I couldn't find the answer. For example in this meal all the three dishes are seasoned with soy sauce. 
We have some varieties of soy sauce: tamari, white soy sauce, light soy sauce and so on. They are different by raw materials and the production process and its length. We use them for different purpose: to salt, season or/and enrich the dish, on its own or in varied combinations: with sugar, salt, fish soup stock, mirin, sake, vinegar, ginger, chili, star anise etc etc. 
What's interesting is that they taste different by area and the maker. At home in Japan I told mum that I feel like loosing Japanese palate. And this is what she took out: hand-made soy sauce, homemade miso, white soy sauce and tamari from miso. This is where she started teaching me cooking when I was little too.
Nowadays E621 is put into a lot of soy sauce to make them taste better, which is shame I feel. So on a weekend in Japan I made a trip to the area known as the birth place of soy sauce, Yuasa, Wakayama to find out the history and their soy sauces. It was so hard to choose which to bring back in the baggage allowance.
These are my selection (one made in Kyoto). I'm so glad they all arrived in London without breakage!

醤油のことを書くのは勇気がいりますね。奥深く、とても個人的なことだと思うので。東北、関東、関西、九州と醤油の味も違えば、味付けも違うので、「美味しい」の感覚も必然的に違うんですよね。私は関西の味付けで育っているので、しっかりした出汁に薄口です。初めて東京出身の友人が昆布なしの出汁をとって、醤油をドボドボと使うのを見た時は、びっくりしました。でも、それが彼女にとっての故郷の美味しい味なんですよね。(が、関西人、特に京都の人はそんな味付けを良くは思っていません。)
ロンドンに住んでいると、「こんなもんだよね」と思って作る料理がスタンダードになっていき、だんだん味が狂ってくることがあります。そんな時は、自分の好きな料理人のレシピでたまに作って、チューニングをします。というようなことを、母に話すと山下家の味を嬉々と出してくれました。食いしん坊は山下の血なんです、、、。
父が正食に関わっていたので、食材はできるだけ無添加、無農薬のもの、味噌はもちろん自家製、お醤油は長野の搾り士、萩原さんという方に作ってもらっていました。萩原さんは、塩の大切さを戦争時に痛感されたので、手作りのお醤油は塩分も香りもしっかりしたものでした。
そして異国にいると、そういう故郷の味がとーっても恋しくなるんです。そこで今回は、普通なら本と主菓子に割り当てられる持ち帰りの重量を、醤油にあてました。
醤油発祥の地、和歌山湯浅から、醤油の原型という金山寺たまりと、この時期限定の生醤油、(湯浅醤油は色、味、香り濃くて、萩原さんのお醤油に似ています。)とーっても香りの良い堀河屋野村のお醤油と京都のマルサワ醤油。無事、割れずに着いたのは、本当に嬉しかったです。早速、使い始めました。うーん、おいしい!後味が何よりも良いですー。焚いている時の香りだけで小躍りしてしまいます。
ちなみに湯浅に行く途中、みかんで有名な有田を通ります。「有田」は「ありだ」と読むこと、この時初めて知りました、、、。
