weird new experience in the new year

 
So the new year has started. Do you have your new year's resolutions? It's funny that if I google 'new year resolution', one of the most common words that comes next is 'idea' and some websites are offering what you should be wishing to achieve. Maybe those who hasn't got willpower strong enough to refuse them might have to be wishing something they even didn't think of? I had my own one that was trying not to eat sweets much, which was already broken when Christmas sweets are on offer in supermarkets! I'll have to rethink of it already.

What I did new in this year was dubbing for a film. It is a documentary about a particular subject in Japan and they interviewed some people. And they've lost a part of voice of a woman because of noisy background and another reason. And I had to speak lip sync with the woman whose lifestyle I wouldn't like and don't understand. (I've watched the rough cut of the film before.) 
When I heard my voice as her after the recording I felt really weird. I felt as if she is me and that idea really disgusted me. Although I enjoyed this new experience it reminded me of another nasty experience some years ago as well. I'm hoping to digest this weird experience this year! 

新年もすでに2週間が経過しようとしています。今回はクリスマスからニューイヤーまで祝日と週末がほぼ繋がってきたので、長いクリスマス休暇をとった人も多いようで、ロンドンは本当に怖い程静かでした。また、その長さのせいで、仕事に戻るのが大変だった人も多いようです。
私も、久しぶりの轆轤は大変で、感触を忘れてしまっていた部分や、身体が鈍ってしまった事実にも気付かされました。とりあえず、手作業の感覚は元に戻ったと思いますが、肩こりに腰痛、、、またヨガに戻らなければいけないかなと思っているところです。
ところで、今年新たに経験したことはアフレコです。日本のある文化を主題にしたドキュメンタリー映画を作っている子たちがいて、ラフカットまではできていたのですが、細かなところを編集していると声のない部分が出てきて、その一部を私が吹き替えることになりました。声は後々変えるんだと思いますが、口の動きに合わせて喋るのは結構難しいことを知りました。(だから専門職なのはわかっているんですが。)しかも、録音された自分の声が、生き方の賛同できない女性の声として画面から聞こえてくるのはとても奇妙な経験でした。この新たな経験はそれなりに楽しかったのですが、昔の出来事も思い出してちょっと嫌な気持ちになりました。
新年早々、冴えないブログになってしまいましたが、今年はこの体験を少しずつ咀嚼していけたらなと思います。
ちなみに写真は、冬になるとハイドパークに現れる大型移動遊園地、winter wonderlandで撮りました。

finally...

it looks like getting warmer here. 
Good. We had enough of cold and miserable weather. The smile on the market stall holders' faces makes me really happy. The town looks much nicer when sunnier. I hope the farmers are happier now too. I'm looking forward to get some lovely rhubarb this weekend if they have some.

The other day I made quinoa salad for the first time since I came back. I felt like missing one ingredient but couldn't remember what... This is what happens when you take a long holiday. It has been the same in the studio too. I don't remember which glaze I use (I have 20 buckets/bottles of glazes, though), where I put certain things and, what is worse, I couldn't recall my neighbour's name when I saw her..! I feel like I'm using different parts of brain when I am in Japan and am here. Certain memory completely disappears even though that's what you know really well. Or maybe just aging matter! ...sigh.

ついに、こちらの気候も穏やかになってきた。
マーケットの人々の顔にも自然な笑顔が出てくるし、人々も陽気になるし、ロンドンもいいよねーと思えるようになってくる。帰り道が明るいのも嬉しいし、何よりも夏に近づいている実感が本当に嬉しい。

こっちに戻ってきてから1ヶ月半が経つけれども、まだまだ2ヶ月の休暇分を取り戻す作業が続く。そうこうしている間に年度末も迎えてしまったし、書類の方の整理に取りかからねば。2ヶ月の休暇の間にこちらの記憶が飛んでいて、探し物にも時間が費やされるし、仕事も作業ノートにいちいち目を通す程、覚えていないことが多々あり、ホント、疲れてしまう。よく知っているもののはずなのに、名前が出てこなかったり、置き場所がわからなかったり、言葉が出てこなかったり、簡単な操作の順序がわからなかったり(例えば、切符を買うとか)、、。こちらにいても日本にいても経験するので、一体脳はどうなっているのか、、、と思う。
ちなみに、こちらに戻るとやたらと甘いものが食べたくなるのは、違う言語で生活していると、日本で生活する以上に頭に使うからだと長いこと解釈してた。けれども、寒くて血糖値が下がることが関係しているとの話を聞いて、納得。甘いものを食べるのに、正当な理由ができるのは、ロンドンの良いとこの一つだな。

raku

'Raku' is a fun and thrilling firing process for a lot of potters, but not for this family. It is a strict tradition of 450 years which is honourable but also is a lot of pressure.
I went to Raku museum in Kyoto. The museum is right next to Raku family house and studio. They are in 15th generation at the moment and still at it. They have a heavy connection with tea ceremony since the founder of its style Rikyu Sen commissioned Chojiro (Raku family's ancestor) to make a tea bowl. Rikyu had a very own aesthetics that now known as wabi-sabi.
The family has been passing on that aesthetics as well as its spirit and producing new tea bowls (not just simple 'new', I hope you know what I mean) that would please the tea master.
In the museum I could see some pieces from the past (even one made by Chojiro) and bits of other pieces that I discovered on this visit. I was thinking more about what it's like being born into this family. What a pressure would it be that you have to have an absolute aesthetics!

京都は楽焼美術館に行ってきました。解説には作風の違いや作品の意図などが説明されていて、構えずに見る事ができて良かったです。スペースの関係上仕方ないのでしょうが、もう少し展示数あってもいいなーとは思いましたが、、、。
向こうでは楽焼きはRakuと呼ばれ、楽しい焼成方法の一つとして経験します。技法もいろんな人に研究、展開されていて、アメリカのRakuなどはほぼサイケデリックと呼びたい程えげつない色をしていて、楽焼きって一体何でしょう、、、?な疑問にかられます。利休が目指した侘びの世界は、向こうの人には日本人の美意識とほぼイコールで認知されたりするのですが、(もしくは、アニメの美意識か、、、。苦笑)日本人でも理解するのは難しいよーと言いたいです。
写真は楽家の玄関。暖簾に「ちゃわんや」と書いてあったのを撮りたかったんですが、、、。

funny? service in japan

OK. Here is one of the downsides to 'great service' here in Japan.
This is how I came back from the shopping the other day. It looks rather compact in the picture, but the bag in the middle is bigger than A2 size and maybe about 15cm thickness.
Those are what I bought on the left. A few books, A2 size sketchbook, colour pencils, pottery tools and some food and a wine: 21 items. The bags from this shopping are on the right.
So this is wrapping waste: 15 bags. What happens is when you buy small items they give you a small bag. And then if you buy more from another shop they give you a bigger bag to put what you bought and the small bag(s) you already have. If you're carrying heavy stuff like a few heavy books or wines, they'd give you two layers of bags. If you buy small items that, they think, might get lost on the way home, they'd put them in a small paper bag and then in a plastic bag. They do it for you to make your shopping comfy but also for 'advertising' purpose too. They want you to carry their bag.
And they are so quick to wrap the item that you hardly have time to refuse the bag! (I managed to do four times this time though!)
By the way, this is what I had during the shopping: Mos Burger. I hate having Mcdonalds as you do but do love having these burgers. If you come over to Japan it's OK to enjoy our traditional food but please try this original burger too. Yum!

この間の買い物の包装についてです。イギリスでは、「そちらのお荷物も一緒にお入れしましょうか?」と提案されることはないです。相手の立場になって、持ち運びやすいようにという心遣いは嬉しいのですが、これだけの袋が使われると、どうかと思います。この袋のマトリョーシカ現象は日本独特のものかもしれません。
そもそも、袋のサイズが小刻みにあることが、日本のデパートのすごいところであり、その原因なのかもしれません。商品をジャストサイズの袋に入れてくるので、他に買い物をすると、また袋が必要になってきます。逆にイギリスでは、この商品にこれは大きすぎるでしょ!みたいな袋を出されることが度々あり、結果、その袋を持ち運ぶこと自体の方が面倒に思え、拒否する事もあります。
そして、今回初のモスバーガー食べました!うーん、変わらずおいしい!いつもとりあえず基本のものを食べて、機会があれば他も、、と思いながらも、ほぼその機会は来ません。また、レジでは急かされる感があるので、新作をチェックする余裕もないです。でも、基本が一番好きなので、いいんですが。ロンドンにもあればいいのに、、と思います。

a report before the open studio

Today, first thing in the morning I opened my kiln. We had a bit funny firing this time. We set the kiln to finish at 7am but when I came in yesterday rather late at 9:30 it was still going up at around 1245. I thought it's odd but thought maybe another studio mate who stayed late the day before might have extended the delay. And then I started working on slip-casting checking the temperature every time I passed the kiln. And I realised it was going up really really slowly, it only went up 20℃ in an hour whereas it should be about 250/h. It wasn't a great sign... so I turned it off at 1265. (I usually fire to 1275 which is, with my kiln, 1260.)
I was anxious about the firing until I opened it this morning. It wasn't a disaster, it was a rather normal one with a few bits of disappointing pieces, which was a relief. 
What is better rather than worse, I got one piece that I'm really really happy with. A tiny tiny bottle I curved its bottom with Japanese chisels and put two glazes on. With a very slow firing at the end almost like a loooong soak, the glaze flowed really nicely. I love it so much that I don't want to sell. It pays off all my worries.
But I wonder why these things happen always before the show??

今日は本焼きの窯を開けました。窯は電気式で焼き方もコントローラーで管理します。大体安心して任せておけるものなのですが、今回は、朝の7時に終わるはずのものが、9時半でもまだ温度は上昇中で、しばらく観察していると1時間に20度しか上がっていない事がわかりました。(プログラムは250℃です。)どの辺りからこの調子だったのかわかりませんが、あまり長く続くと釉薬にも影響してくると思い、いつもより10℃低いところで焼きを止めました。
そんなことがあったので、結果がすごく心配だったのですが、窯の温度が下がった今朝、開けてみると、いつもと同じような感じで安心しました。残念なものがいくつかあるのも、いつものことです。
今回は一つだけ、底を彫刻刀で削ったものが、いい感じに仕上がってくれました。焼きが長かった分、2種類重ねた釉薬がきれいに流れて、とてもかわいいです。心配していた後だけに、無事に仕上がってくれるだけで、すごく嬉しいものです。

all the little things

What a hectic week I had! I get busy once in a while but it wasn't like that. I had to move around for something I didn't expect to happen at all! I nearly missed the deadline for the show in Aberystwyth and didn't realise how hot and nice that day was...
I'm not going to the details as it would depress me but it's happened and I wonder how you process these things in your head. Do you believe in karma? Do you think these things are meant to happen? Do you regret things you didn't do to prevent it? How long ago do you go back in that case? And how do you come out of it??

Anyway, let's move onto something happier. 
Yesterday, I went to see Grayson Perry's tapestries in Victoria Miro, which he explored with the channel 4 documentary series. The artist was the motivation that I started ceramics and his pots have been always inspiration for the fact that something can be more than something. 
And happy coincidence! The gallery was having another show at the same time: the installation by Sarah Sze. I love her work, the delicacy of it, the colour and all the little things she makes. It reminds me that the universe is interconnecting in a very fragile balance. 

...And I felt OK.

先週はてんてこ舞いの一週間でした。締切までに最後の焼きをしようと、器作りをしました。ぎりぎりセーフで出来上がった!と思えば、事件勃発。カメラが盗まれたのです。しかも、スタジオ内から。ホントに一瞬のことでした。
私が電話をかけなければ、、、と思いたって電話をかけている間、その瞬間をどうやって見計らう事ができたのか、私の頭にtune inしたとしか思えない事でした。ハックニーという土地柄、こういう事は日常茶飯事ですが、プロフェッショナルの技、嗅覚を思い知らされたようでした。
自分の不注意に落ち込んだ私でしたが、カメラは元彼から値切って買った、ある意味思い出のあるものだったので、そういう部分を断ち切ってもらったのかなーとも思います。皆さんはこういう時、どういう風に気持ちを処理するものかしら?母はいつも、「生きているんだから。」と言ってくれたものでした。

昨日、Grayson Perryのタペストリーを見に、Victoria Miroに行きました。そこで、Sarah Szeのインスタレーションを見つけて幸せでした。彼女の作品は、とても精巧なバランスで作られている宇宙を思わせてくれて、自分の小ささと大切さを感じさせてくれるからです。4年前の同じギャラリーでのインスタレーションと比べると小さめでしたが、それでも、どうやって作ったのか、、と思うと途方もない仕事で、彼女の繊細さと遊び心も感じられるきれいな作品でした。

the queen's diamond jubilee

Here in the UK we're in the middle of the diamond jubilee weekend. It was a bit shame about the weather but the pageant on the Thames looked great in the screen. It was like a vessel museum on the river. It was spectacular. 
In Japan it has been always a male Imperial family member who succeed to the throne. Recently we're having arguments if we should change the law and allow succession to female members also. I think it would be hard to understand for you having the Queen why that is even the issue. Apparently one of the reasons is to do with our native religion Shinto. Like some other religions there are things women shouldn't do (or, shouldn't be allowed to do). 
Anyway I wondered what it would be like if our emperor made a pageant...


こちらはエリザベス女王の即位60周年でお祝いムードです。そこら中で英国国旗が翻って、曇り空に戻った薄暗いロンドンも少し華やかです。テムズ川のパレードは、イギリスならでは(というか、日本では地形上無理!)という感じがしますね。川の歴史と船の歴史、それははたまたイギリスの歴史でもあって、ロイヤルファミリーには何の思い入れもない私ですが、なんだか感慨深いものがありました。(また調べたいことがいろいろ出て来てしまったり!)
こちらの人に天皇のおはす日本だったら、どんな行列になるのか、、、と尋ねられました。想像できないと答えた私は、小さな頃のエピソードを話しました。地元の駅で電車待ちをしていたある日、近鉄特急で伊勢神宮参拝に向かわれる昭和天皇、皇后様を見かけました。幼かった私は、特急を一本貸し切りにされるなんてすごいなーと思ったものですが、私も大人になって、敢えてわざわざ近鉄電車を使って参拝に行かれるのにも意味があることを知った事です。それさえもうまく説明しきれたのか不安なもので、イギリスについても日本についても知らない事がたくさんあるなーと気付く日々です。

confit de canard

A special dish: confit de canard and pink fir apples with balsamic reduction.
Yesterday I worked at home in front of the computer checking invoices and getting ready for self-assessment.
So it was a perfect day to try a new dish. I love challenges but this wasn't the one. It takes a long time to cook but is so easy to make. Although it is such a specialty as we associate French cuisine with luxury(?) or as it is luxury to spend so much time on cooking(?). Hmm...
It was lovely and different but I'm happier when I get rice cooked perfectly. 


昨日は家でペーパーワークをする間、この料理を作ってみました。
鴨のコンフィです。フランスのお土産(缶詰)という印象だったのですが、自分でも作れる事を知り、試してみました。ただ、調理時間が長いので、なかなか作るタイミングを見つけるのが難しかったです。
調理法は鴨肉を白ワインベースのマリネの中に一晩漬け込み、低温に温めた鴨の脂の中で2時間程かけて火を通すだけ。贅沢感が出るにも関わらず、すごく簡単でした。
ポテトも同じように(オーブンの中で40分ほど)調理したのですが、これは揚げるのともローストするのとも違った食感になり、すごくおいしかったです。バターを溶かした中で同じように火を通したら、絶品かもしれません。
いつもと違う料理を試すのは楽しいですが、でも、お米をちゃんと炊けた時はもっと幸せです。この感覚は何なんでしょうね。日本人ならではのものかしら?

renkon

Sunday lunch: pan-fried cod fillets with sweet sour sauce, renkon kinpira and broccoli with sesame dressing. 
Renkon is lotus root. I get it from Chinese groceries. Kinpira is one of our cooking style. We cut vegetables into thin slices and stir-fly it until it's almost done and then after adding sugar and soy sauce to it you continue until the sauce is gone. It sounds easy but it is very crucial to get the slices in the same size and thickness so that they are all evenly cooked. For that, of course, you need sharp quality Japanese knives! 
Sesame dressing was so popular at yakitori on Friday. So I'll leave the recipe here. Please try it if you like a change. 
4tbsp sesame roasted and grinded, 2tbsp sugar, 3-4tbsp mayonnaise, 2 tbsp ponzu (soy sauce with citrus juice, alternatively use 1 tbsp soysauce and 1 tbsp white wine vinegar and some drops of lemon juice), 3tbsp milk (or soya milk).


昨日のお昼ご飯は鱈の甘酢あんかけとレンコンの金平、ブロッコリーのごまドレッシングです。
レンコンはアジア食材のお店で買ってきます。日本の値段を覚えていないのですが、たぶん、そんなに変わらない値段だと思います。ただ、日本のように小分けして売ってはいないので、3コブくらいを使い切らなくてはいけません、、、。でも、手に入るだけでも、ありがたいです。


今月末に携帯の契約が切れます。それを機にiPhone(ともしかすれば新しいネットワーク)に切り替えるつもりなので、下調べをしています。私は携帯を家に置き忘れたり、コールに気がつかなかったりしてしまう位の人間なので、基本的に電話をかける機能があれば十分なのですが、地図を見られる事、友人と話していて気になる言葉をすぐに調べられる事ができるようになるのが、魅力的です。ところが、ネットワークとプランの比較をするのは、結構疲れます。
ちなみに、こちらは電気もガスも供給会社を自分で決めなければいけません。しかも、10社以上もある中から、個人各々の基準で選んでいくのです。請求書の裏には発電の方法の割合(火力が××%、原子力が○○%など)も書かれていて、その割合は電気会社によって違うはずなのですが、配線が変わるわけでもないし、どうやって管理されているのかよくわかりません

changes in the new year -2

As you might know already I like trying out new recipes. I referred to Ottolenghi cookbook in 2009, 2010 and Nigel Slater tender and Jamie magazines in 2011. And this year I will try out some recipes from Modern Pantry cookbook. It is always nice to find out the combinations I've never tasted...!
Also I've got an old book from my friend: The something special cookbook published in USA 1959. It in fun to find out what were special menus those days. I just skimmed through some pages and have to say they are not so special nowadays using basic ingredients and rather simple cooking methods some inspired by Italian and French. It is weird that all the menu has articles of 'to freeze in advance', 'to do the day before' and 'to do in the morning' after how to serve the menu. Maybe they still didn't know much what they can freeze or not as the fridge was still relatively new thing(?), and maybe they were busy working outside to improve 'home' so they had to prepare special menus when they have time(?). It is an interesting book not as a cookbook but something I can glance a way of life in those days.


今年はModern Pantry cookbookを試してみようと思っています。Modern Pantryはオセアニアからやってきたシェフを頭にするロンドンのレストランです。そういうバックグラウンドなので、メニューにはアジアの影響も強くて、焼きナスやお米クラッカーなども本にはあるのですが、私たちが作るオーソドックスなものとはちょっと違うので、試してみるのが楽しみです。
また、不要品を処分している知子さんから、古いレシピ本も頂きました。50年代にアメリカで出版されたものなのですが、その当時の生活が伺えるようで、読むのが楽しいです。大学で専攻の一つだった生活史、もうちょっとしっかり勉強しておけば良かったなー、、、と思ってしまいます。
そのうち、料理ブログも再開です。

gratin



I made gratin today to use up Reblochon which was going off. 
I made butternut squash mash, potato mash and boiled macaroni. Into the sauce I put leek and carrots and Chinese leaf (I know this vegetable is not so familiar in your meal but in Chinese dishes. However, almost everybody in Japan knows that it goes very well with white sauce. Please try it!). After putting the cheese, bread crumble and Romanesco broccoli boiled for 30 seconds just to get rid of smell I just baked it until the cheese gets browned. This is proper winter dish. Oh no, it IS winter!!


今日はグラタンです。改めて冬なのだと実感します。
スクォッシュとポテトのマッシュにマカロニ、ホワイトソースはちょっとピリ辛にするため胡椒を多めでチリも入れて、ルブロションというチーズを使いました。カマンベール系の独特の匂いのするものです。最後にパン粉を散らしてチーズが焦げるまで焼くだけです。
木のようにトッピングにつかったのはロマネスコブロッコリーというカリフラワー。でも、味はブロッコリーに近いもので、幾何学的な形状がとても野菜とは思えないです。
ところで、意外に思うかもしれませんが、こちらにはパン粉というものは売られていません。各々、焼いたり乾かしたりしたパンをフードプロセッサーなどで砕くようです。もちろん、それは日本のパン粉とは違い、粉か固まりになってしまうので、こちらにいて改めて、日本のものはどうやって作られるのかと疑問に思います。

Japanese beauties

Here in Japan we have just finished rice planting. The field is very beautiful with orderliness of the new plant. Now we do all this using a machine but when I was small I could still see farmers planting it with hands. (At that time the machine wasn't good enough to do planting in the corners.) Of course before the machine we did it all by hands and the finish looked as good as this.

I was just in time for Azalea blossoms. I love its smell and shape and also it reminds me of my childhood. I loved its honey so much and would suck it on the way to my primary school. It tasted really good with morning dew. Some people pick the flowers and make juice. It's got subtle sweetness and flavour. I wonder if anybody does that in UK...?

This is my collection of Yanagi cutlery. There are so many things I have been keeping in my room here as I couldn't bring to London because of the luggage weight limit. This is one of these things. I collected them over 2-3 years when I didn't have much money. So they are very special for me personally and also as a product they are very beautiful. The collection is not completed... yet. Maybe I might add another pair while I'm here...?
I think you could say Sori Yanagi is the first product designer in Japan. His father Soetsu Yanagi was good friends with Bernard Leach and started Folk craft movement: Mingei undou that the skills, the joy and the spirituality come together in making in quantity. Sori the son as a designer focused on the function and the beauty of the object. The way two approached to the object might be a little different but both wanted to make/introduce beautiful objects. (And actually in Sori's essay he picks up a lot of folk crafts.)
I used to wonder if our aesthetics come from the spirituality or the tendency we've got through our life by seeing things. Some people find the beauty in something the others don't. And I'm sure the person has a special connection with the object. I wonder what that is...

日本の美、再確認の記録です。(新しいカメラを手に入れるまではいつものスナップショットをお楽しみくだされ。)この季節に帰ることはほとんどなかったので、いろいろなものが新鮮に見えます。
田んぼの景色。少なくなったとはいえ、まだ私の田舎には健在します。きれいに植えられた稲を見ると新鮮な気持ちになります。私も素敵な実がなるようにがんばるよ。
つつじ。つつじはイギリスにもありますが、蜜を吸っている子をみたことはありません。つつじの蜜の味を知っている子はいるのかしら、、、?
柳宗理のカトラリー。東京で暮らしている時に集めていましたが、重さのためロンドンには持っていけず、10年間ずっと使われずにいました。今回は重さ制限が2倍になっているので、ぜひ持って行きたいと思っています。でもこのコレクション、半分ほど集まっているだけで、他にはカニフォークやグレープフルーツスプーンなどもあります。
ちなみに、イギリスではグレープフルーツを半分に切ってスプーンで食べるという人を見たことがありません。だいたい剥いてしまいます。このスプーンを見てもどう使うのか、なぜぎざぎざがあるのか検討がつかないと思います。ついでに、イチゴスプーンもスイカスプーンもありません。誰が考えたんでしょうね。今から調べてみます。

recipes

Today I started tidying up in my glaze book.
The book I have since I started making is getting full and looked really messy. I have all the recipes I tried for earthenware, porcelain and stoneware. They are all different temperatures, colours and qualities. I can't even tell where some of the glaze recipes came from. And if I continue my making, I thought, this book cannot come with me.
So I started transfering some of the recipes I liked and uses into a new book.
I found notes of how to calculate chemical formula in glazes, which I find myself useless with. When I started I was so keen to be good at it knowing my brain is not really made for it. I really admire good glaze makers...
Anyway when I look at it, I wonder, if those who's good at making glazes can tell what the glaze would look like without really mixing the materials and firing it. I wonder if they can go 'hmm... sounds yummy!' when they hear the recipes.

今日は長いこと使っていた釉薬のノートを新しいノートに整理し始めました。始めた頃からのレシピやら調合の計算の仕方などをただただ書き留めてきたので、あちらこちらにいろんなレシピがばらついていました。
釉薬は制作の中で一番ドキドキすることで、釉薬がかかったモノはできあがった感があるのと同時に、うまくかかっていないと本当にがっかりさせられるのです。私は電気釜を使って焼くので失敗は少ないとはいえ、それでも、どうして起こったのか?と、不思議に出会うこともたまにあります。きれいな釉薬を見るとワクワクしますし、そんな釉薬を作れる人は本当にすごいなと思います。
私はもっぱら見つけてきたレシピの配合を変えて、目的の風合いに近づけるのが精一杯ですが、それでも思ったようにはいかないのが実際です。料理のレシピを聞いて、「それ、おいしそう!」って思えるように、釉薬のレシピもわかればいいのにな、、、と思います。

chicken

I tried a new recipe: roast chicken (!) with sumac, za'atar and lemon.
It is Ottolenghi recipe (of course!). It tasted really lovely, simple but full of flavour. I think the marinade would be great for BBQ as well.
Talking about BBQ, we Japanese also have some variety of the marinade sauces. We can make one from fish stock, soy sauce and mirin etc... I will show the recipe here before the next summer. ;D
This time the sauce for runner beans is flavoured with turmeric and coriander. It was good contrast with the chicken.

ローストチキン試してみました。
Ottolenghiのレシピで、中東のスパイスを使います。中東料理もいろいろありますが、豆類と羊肉とスパイスの他に特徴があると思うのは酸味の使い方です。レモンやヨーグルトを料理の一部によく使うのですが、使い方が面白く、この発想はどこから来たのだろうと思います。そういえば、モロッコではレモンの木をよく見かけましたし、ミルクとレモンを混ぜると瞬間にヨーグルトっぽくなりますよね。なんだか、いろんな食事を試すたびに、料理の歴史を知りたいなと思います。
ついでに、日本人はよくミルクを飲んでお腹を壊すのに、こちらの人にそれがないのは、よく知られた話だとは思います。これはミルクを飲む文化がこちらの人は長いからなのですが、もともとミルクを飲み始めたのはエジプト人だそうです。身体が慣れていなかった当時のエジプト人はかなり苦しんだのではないかと想像できます。

roast

I'm cutting down intake of sugar and carbohydrate after the cake festival.
Roasted vegetables: carrot, butternut squash, parsnip and leek with flavour of thyme or za'tar. The runner beans are sauteed with butter then added stock, cream, cummin, onion seeds and s&p.
Roasting is a cooking method I learnt since coming to this country. I'd never used oven to roast before that. My roasting experience is very little and I feel awkward especially with meats, so always only vegetables. But it's one of the things I'd like to feel confident about...
Not long ago I talked about cooking with friends over roast dinner. One of the topics was the difference between roasting, grilling and baking (as two of us were Japanese and we didn't have clear definition of these words as well.), and I suddenly wondered when we Japanese started using oven. The oven culture started with making bread and we didn't have the culture before opening of our country. We had grilling technique but didn't use oven nor similar thing I think. I hope somebody can tell me.

ケーキ週間の後なので、ちょっとダイエット食にしています。
昨日の夕食はローストベジタブルです。ニンジンとパースニップ、スクォッシュ(カボチャみたいなものです)とリークをオリーブオイルとビネガーちょっととタイムやザターなどのスパイスをふりまいて、4,50分ほど、オーブンでローストするだけです。
こちらではローストはかなり普通にするようですが、お腹をすかせて帰ってくることの多い私にはかなりの忍耐力が試される料理法です。お肉系は火の通りがよくわからなくて怖いので、いつも野菜ばかりですが、いつか何てことなく作れたらな、、、と思います。
ところで、この間、友達と話していてオーブンが日本に伝わったのはいつなんだろう、、、と疑問に思いました。カステラが伝わった時も最初はオーブンではなく、蒸しに近いものだったと聞いています。いつ、どこから日本にやってきたのか、知っている人がいたら教えてください。

pepper

my salt & pepper pinch box will be available at origin

One of the wonders in English for me is 'pepper'. I'm curious to know how come you use the word for different things. One is chili, another is paprica, another is pepper of 'salt & pepper' to my knowledge. They don't look similar nor taste similar...
We Japanese have three different words for these and never confusing.
This is another thing but 'chilly', 'hot' and 'spicy' used confuse me too. I wouldn't get it if somebody started conversation about eating spicy hot food with chilli in a chilly (or hot) room.

こちらで言葉について疑問に思っている事です。胡椒、パプリカ、唐辛子を全部pepperと呼びます。パプリカ、唐辛子は外見似ている感じがあるとはいえ、胡椒も同じなのはかなり意外です。(私にとってはpepperと言えば胡椒ですが。)
あと、「寒い」の意のchillyと「辛い」の意のhot, spicy(この二つには微妙な違いがあります)もよく間違えました。(というより、今でも間違えると思います。)

hatfield 2010

This weekend we went to Hatfield to see Art in Clay. There are more than 100 potters/ceramicists exhibiting their work in this show every year.
It was my first time in 6 years to visit there and I might not have gone there if I didn't get invitation ticket from Taja who makes beautiful porcelain wares. They demonstrate and let the visitors to experience throwing. You might be surprised to see what we can do with the material.
We met Yo Thom who used to have a lovely studio in Hackney. And she was exhibiting with a new born baby girl. The girl was very cute with lovely smile and big. Yo said maybe she was born big knowing her mother is a ceramicist. (We have strong arms ;D) I sometimes wonder these things happen as if it meant to be or as we want to see it that way.

今週末はHatfieldというKings Crossから20分ほど北に向かったところに行ってきました。100人以上の陶芸作家さんの作品を一気に見る事ができる大きなショーがあったのですが、私はかなり久しぶりに訪れました。
葉さんに久しぶりに会い、彼女の元気で大きな赤ちゃんを見ることができて嬉しかったですが、Tajaさんに会う事ができず残念でした。数に圧倒されて、しっかり見る事ができなかったのも残念でしたが、いろいろな作風を見て勉強になりました。

water temperature

Today I had a quick conversation with my new neighbour. He's living in my neighbours' place while they are away. He is an artist and came here from Norway for a work exchange scheme or something, I heard.
Anyway we also talked how nice and hot the weather was and he said he had got used to it here. So I asked him how hot it gets in his country. Then he replied it gets as hot as the water gets 20℃.
I've never heard that expression... I don't know how hot it has to be to warm water up to that temperature. I wondered if it is Nordic expression where they have so many lakes surrounded by seas.

I'm very happy that strawberry is in season now. I'm eating almost everyday.

今日はスタジオのご近所さんの所に住んでいる男の子と話をしました。交換留学みたいな感じでノルウェーから仕事に来ているアーティストです。
ともあれ、天候の話になったので、私が彼の国ではどれくらい暑くなるのか訊ねました。すると、「水が20度になるくらい暑くなる」と答えるのです。私はそれがどれ位暑いのかわからない上に、そんな表現の仕方を聞いた事は今までありませんでした。
彼の国では水の温度も天気と同じように予報されたりするのか、ただただ彼個人の興味/仕事から水の温度にも敏感になったのか、そのうち聞いてみようと思います。

こちらは今が苺の旬です。ほとんど毎日のように食べてます。
